    4 chicken breasts

  • 2 tbsp butter
  • 2 cups mushrooms, chopped
  • 2 cloves garlic, minced
  • 1/2 cup cream cheese
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup parmesan cheese, grated
  • Salt and pepper, to taste
  • 1 tbsp fresh herbs (parsley or thyme), chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a pan, melt butter and sauté garlic and mushrooms until tender.
  3. Stir in cream cheese, mozzarella, and parmesan, and cook until the mixture is creamy and smooth. Season with salt, pepper, and fresh herbs.
  4. Cut a pocket into each chicken breast and stuff it with the mushroom and cheese mixture.
  5. Heat a pan and sear the chicken breasts until golden on both sides, then transfer to the oven and bake for 20-25 minutes.
  6. Remove from the oven, and let rest for a few minutes before serving.

Notes

For extra richness, you can add heavy cream to the garlic butter sauce when preparing the mushrooms.
